Portuguese traditional food: pastel de nata πŸ‘¨πŸ»‍🍳

    Hello everyone! 😊 How have you been? What are you up to lately? The past week, we decided to try to make a very typical portuguese recipe from scratch. This cream pastries, known in Portugal as the iconic pastel de nata, were the perfect project and even though is took us a bit to get the hang of it, the result was totally worth it πŸ€—.

Ingredients:
  • 500 grams of all purpose flour
  • 3 mililiters of water
  • 400 grams of salted butter
  • a pinch of salt
  • 200 grams of sugar
  • 2 tablespoons of all purpose flour
  • 8 egg yolks
  • 5 mililiters of cream
  • lemon zest
Preparation:
    First of all, clean your kitchen counter! This is very important, since we will be working on the kitchen stone ☝🏻😌.

    Warm your water lightly and dissolve a pinch of salt in it. Pile the flour in the counter and make a hole in the middle using a glass of water. Then pour the water in that hole and start mixing everything. This will be very sticky at the start, but be persistent (add a bit of flour if necessary) and keep working the dough until it turns into a smooth ball of dough. Set it aside and cover it with a kitchen cloth to rest for 20 minutes ⏲️.

    After the dough rested, spread it out in the shape of a square using a kitchen roll. Make the doung as thin as possible.

    Divide the butter in 3 different portions 🧈 and using one of them, butter the square as much as you would like. If you feel like the entire portion is to much, don't use it all! πŸ‘πŸΌ Leave about one centimeter clean around the dough. Then, fold the square from the bottom to the top and from left to right. Spread that dough and repeat the process two more times.

    After spreading the dough for the last time, cut it in 4 or 5 strips. Then roll each strip until you have short rolls.
    
    Cut the rolls in circles that are about two fingers thick. You will have between 20 to 25 circles. Place each circle on a cupcake pan and with your tumb wet in a bit of water, start to push and spread the circle until it has spreaded to the side and covers the entire surface on the inside.

    Now for the filling. Add the sugar, yolks, 2 tabelspoons of flour, cream and lemon zest to a pan and mix it very well. Bring it to a boil and keep mixing, so it does not stick. When the mix is creamy and thick, let it cool until its only slightly warm. While the mix is cooling, pre-heat the oven at 200 ΒΊ C 🌑️.

    Pour 2-3 tablespoons of cream in each pan and put them in the oven for about an hour ⏲️, but keep and eye just in case you need to turn them of a bit earlier. When the edges are gold and crispy, they are ready.

    Add some cinammon on top and they are done! πŸ€—

    OlΓ‘ a todos! 😊 Como tΓͺm estado? Que tΓͺm feito recentemente? Na semana passada, nΓ³s decidimos tentar fazer uma receita muito tΓ­pica portuguesa de raiz. Os icΓ³nicos pastΓ©is de nata, foram o projeto perfeito e embora tenhamos tido dificuldade a apanhar o jeito, o resultado valeu muito a pena πŸ€—.

Ingredientes:
  • 500 g de farinha sem fermento
  • 3 mL de Γ‘gua
  • 400 g de manteiga com sal
  • uma pitada de sal
  • 200 g de aΓ§ΓΊcar
  • 2 colheres de sopa de farinha sem fermento
  • 8 gemas de ovo
  • 5 mL de nata
  • casca de limΓ£o
PreparaΓ§Γ£o:
   Antes de comeΓ§arem, limpem o balcΓ£o da cozinha! Isto Γ© muito importante, uma vez que vamos trabalhar sobre a pedra ☝🏻😌.

   AqueΓ§am ligeiramente a Γ‘gua e dissolvam na mesma uma pitada de sal. Coloquem a farinha no balcΓ£o, formando um montinho, e faΓ§am um buraco na centro com a ajuda de um copo. Depois, aos poucos deitem a Γ‘gua no buraco e comecem a misturar tudo. A mistura serΓ‘ muito pegajosa no inΓ­cio, mas sejam persistentes (podem acrescentar um pouquinho de farinha se precisarem de ajuda) e continuem a amassar atΓ© terem uma bolinha lisa. Ponham a massa de lado e cubram-na com um pano de cozinha para descansar durante 20 minutos ⏲️.

   Passados os 20 minutos\ApΓ³s esse tempo, alisem a massa na forma de um quadrado, utilizando um rolo de cozinha. A espessura deve ficar o mais fina possΓ­vel. 

    Dividam a manteiga em 3 porΓ§Γ΅es diferentes 🧈 e barrem o quadrado com uma porΓ§Γ£o. Caso sintam que nΓ£o precisam da porΓ§Γ£o toda, nΓ£o a usem toda! πŸ‘πŸΌ Deixem cerca de um centΓ­metro limpo Γ  volta da massa. Depois, dobrem o quadrado de baixo para cima e da esquerda para a direita. Espalhem novamente essa massa e repitam o processo mais duas vezes.
   
    Depois de espalhar a massa pela ΓΊltima vez, cortem-na em 4 ou 5 tiras. Em seguida, enrolem cada tira atΓ© terem uns rolinhos curtos.

   Cortem os rolos em cΓ­rculos com cerca de dois dedos de espessura. No fim terΓ£o entre 20 a 25 cΓ­rculos. Coloquem cada cΓ­rculo numa forma de queques e com o polegar molhado num pouco de Γ‘gua, comecem a empurrar e a espalhar o cΓ­rculo atΓ© terem forrado bem a forma.

    Agora para o recheio. Adicionem o aΓ§ΓΊcar, as gemas, 2 colheres de farinha sem fermento, as natas e a raspa de limΓ£o a uma panela e misturem muito bem. Levem a panela a ferver e continuem a misturar para nΓ£o colar. Quando o creme estiver cremoso e espesso, deixem-no arrefecer atΓ© estar morno e vertam 2-3 colheres em cada forma (deixem uma borda de meio centΓ­metros atΓ© ao topo).
    
   Ponham os pastΓ©is no forno durante cerca de uma hora ⏲️ a 200 ΒΊ C, mas fiquem atentos para o caso de precisarem de os retirar do forno um pouco mais cedo. Quando as bordas ficarem douradas e estaladiΓ§as, estΓ£o prontos!

   Adicionem um pouco de canela por cima e sirvam! πŸ€—
